Quinta Sardonia Sardon




Producer story:

Quinta Sardonia is a prestigious, biodynamic wine producer located just outside the official Ribera del Duero DO (Denominación de Origen) in the "Golden Mile" of the Duero River in Spain. The vineyards are located at an elevation of 1,600 feet, which allows for, ideal phenolic maturation, ensuring, the grapes reach, full, aromatic, ripeness with natural acidity. First produced in 2014, Sardón is the winery's second label, intended to be a fresher, more approachable, and fruit-forward wine compared to their flagship Quinta Sardonia label.



Tasting and Pairing :

This Sardon wine specifically, it is characterized by intense red/black fruit aromas (cherry, blackberry), floral notes, and a spicy, mineral-driven palate with fine, juicy tannins. It offers a balanced, easy-drinking, and powerful experience. It pairs beautifully with our bolognese pasta, where the tannins in Sardon help cut through the fat of the meat (beef/pork) and the cream or milk often used in a traditional ragu. The dark fruit notes (plum, black cherry) and potential earthy undertones in a high-quality Spanish red complement the savory, tomato-based sauce. Last for not least, because Sardon is known for being elegant yet structured, it bridges the gap between the acidity of the tomatoes and the weight of the meat.
