Pasta Runs in Our Family
Snowmass Village has always been a place built on adventure, beauty, and the kind of high-alpine magic that makes people return year after year. When Base Village broke ground, it transformed this side of the mountain—from a quiet slope-side pocket into a true gathering hub of skiers, locals, travelers, music lovers, and mountain families. The building you’re sitting in has watched that evolution unfold. What began as a cheerful candy-shop storefront became, in 2012, Slice Italian Bistro: a casual, counter-service slice joint where families grabbed pizza in ski boots and shared red-checkered table nostalgia. In 2018, Slice of Italy arrived—refining the experience into hand-rolled pastas, imported tomatoes, and the first step toward honoring Italian culinary heritage in a true sit-down dining room.

Montevino (2025) is the natural next chapter. We are a love letter to Italy and to the mountains that define our home. Here, regional Italian cuisine meets alpine sensibility—handmade pastas, thoughtful salt, acid, and fat balance, honest sourcing, and wines that speak of soil, not style trends. Our identity is rooted in warmth, craft, and sincerity. We believe hospitality is not performance but stewardship: of your time, your palate, and your memory of gathering at the table. While our name is new, our heart is seasoned by a decade of growth, feedback, learning, and the loyalty of Snowmass guests who have grown up with us.

Our goal is not simply to serve dinner, but to create belonging. Montevino exists to slow the clock in a village built for motion: a place where a perfect glass of Barolo, a handmade raviolo, or a post-ski amaro can anchor you to the moment you are in. We honor producers who farm with intention, winemakers who respect terroir, and food traditions passed down by grandmothers rather than TV chefs. We strive to be approachable, never pretentious, and to carry Italian soul into the high Rockies with humility and joy.
